You can just set it and leave it, using the CAS on the back of the engine's head (firewall side). You just need a timing light, and to make it easier, a buddy to help you.
But a lot of people (including me) recommend going with a Megasquirt. If you go this route it is recommended that you install the megasquirt first and get it running well on a stock setup. Then when you install all your aftermarket parts you only have to make some adjustments to the computer before it's drivable.

I would suggest you go here: http://www.miataturbo.net/forumdisplay.php?f=18 and read a lot.
Definitely this post: http://www.miataturbo.net/showthread.php?t=12239
Install can be as easy as unplugging your old ECU, plugging in Megasquirt, plugging in a vacuum source, and hooking up a COM->USB cable, also you need to install in IAT sensor, so you will need a bung to plug that into (usually TB elbow). Then run the wires according to the install dock (usually involves splicing them into 2 wires already on the car).
Then from there you can load a base map via a computer (usually works fairly well on a stock miata) to get you started.
You can usually pick up a used one FS in the classifieds, either here or at miataturbo.net. Braineak also builds them (MF-Brain on here) and sells them. I had him build mine and it was great.
For a stock car you can probably use Autotune to even out the map pretty well.

Depends on how much power you intend to make. I don't know what the expected power is on that kit. My stock injectors worked fine with 6psi on the FMII turbo kit. I find it hard to believe you would make more power than that.

Well psi is relative obviously, but the rwhp numbers you can actually work with.
There is a really nice post that sums up a lot of the information you are going to need: http://www.miataturbo.net/showthread.php?t=4288
I know it's a lot to read, but worth every second reading it. Here is a quote from it to answer your above post:
So I'm assuming you have a light purple ones, which should give you enough fuel to reach your goal, plus some head room.

The 1.6L (205cc) fuel injectors have enough room to run about 5-6psi. However at this level, the fuel pressure required to get enough fuel into the motor through the small injectors becomes so great, that the injectors can actually lock. If you are running more than 140-150rwhp, chances are the injectors are maxed out. A very common upgrade is to install the 1.8L injectors. These will should provide you enough room to run about 7-9psi of boost (170-180rwhp).
